BUBBLY EXPRESSO PANCAKES
125ml SodaStream sparkling water
1.5 cups plain flour
1 tbsp baking powder
2 tbsp caster sugar
1/2 tsp salt
1 egg, lightly whisked
1/2 cup milk
2 tbsp unsalted butter, melted
Extra butter for frying pancakes
200g caramel chips
80ml thickened cream
To prepare the SodaStream sparkling water: Fill a Sodastream 1 Litre Bottle with cold water and carbonate.
Brew 2 shots of espresso coffee using a coffee maker.
Take a large mixing bowl and add in flour, baking powder, caster sugar, and salt. Mix well.
Make a well in the center and add the egg, milk, SodaStream sparkling water, cooled espresso and melted butter.
Combine (a few lumps are okay) using a hand blender with whisk attachment.
Heat a large non-stick frying pan over a medium heat. Grease the pan with butter. Add in 1/4 cup of the mixture in to the pan for each pancake. Cook pancakes for 2 minutes or until bubbles appear on surface, then turn and cook for a further 1-2 minutes or until cooked through. Set aside and keep warm under some aluminium foil
For the Caramel Sauce:
Combine caramel chips and cream in a heatproof bowl. Microwave for 1-2 minutes until the mixture has melted and has come together.
Drizzle pancakes with caramel sauce and enjoy
