TEMPURA TOFU⠀
⠀
INGREDIENTS:⠀
• 2 x bunches asparagus⠀
• 1 x 350g pack organic firm tofu⠀
• 1/3 cup plain flour, for dusting⠀

For the dipping sauce:⠀
• 180ml dashi stock⠀
• 3 tbsp mirin⠀
• 3 tbsp soy sauce⠀
• 4 tbsp grated daikon⠀
• 1 tsp grated ginger⠀
⠀
For the tempura:⠀
• 250ml SodaStream sparkling water (icy cold from the fridge)⠀
• 1 cup plain flour⠀
• 2 tbsp cornflour⠀
• 1/2 tsp baking powder⠀
• Salt⠀
⠀
METHOD:⠀
Trim the woody base off the asparagus. Next cut the tofu into finger shapes and then pat dry on paper towels. Dust 1/3 cup plain flour on top of the asparagus and tofu.⠀

To make the dipping sauce, place all the ingredients in a small saucepan and warm through. Keep warm.⠀
⠀
Next, pre-heat the cooking oil in a deep fry pan to 180°C.⠀
In a cold bowl, place plain flour, cornflour, and baking powder. Mix well. Just before frying, add 1 cup of icy cold Soda Stream sparkling water to the mix, and stir through very gently.⠀
Dip the dusted organic tofu & veggies in to the mix and deep fry until golden. Drain on a paper towel.⠀

Serve with the dipping sauce and enjoy! ⠀
